Today isn’t a real blog post in the sense but more of a post of another post with no recipe just alterations. I still have lemons – although I’m on my last one!!!! Next recipe post and then i’m on a lemon break. I googled “lemon and-“and multiple options popped up – one of them being lemon and coconut macaroons – so I jumped on this one.
i mostly wrote this post as now i have plans for a future post of something like this in a different post, but wanted to post the original. i got this recipe from once upon a recipe’s blog, the recipe was simple, easy and i could do it in time for a friend’s bbq – so it was all over a win. the recipe went over so well i had to give credit where credit was due!
the only alterations i made was using the lemon curd and white chocolate instead as i felt dark or milk chocolate and lemon might not be the best, but i’ve always liked lemon and white chocolate together; i personally prefer it.
i did wonder if the extra liquids from the lemon curd would really affect it so i opted to only use 3/4 cup of condensed milk rather than 7/8 cups the recipe called for and used 2 tablespoons of lemon curd instead of the additional 2 tablespoons (7/8 cup is simply 3/4 cup plus 2 tablespoons) and everything went perfectly. it just took a bit longer to bake – about an additional 15 minutes – but that may be because of my little convection oven also.

*minus 2 tablespoons of condensed milk
*add 2 tablespoons of lemon curd
*use white chocolate instead – add a sliver of butter with it to help melting and prevent overheating
– if you don’t have lemon curd and don’t want to make this much for such a little amount you can simply keep the recipe the same and add the zest of two lemons –
