per stated in my other post – I have plans of really making this blog more about my daily life. The real shit I eat posts will continue – this time in terms of breakfast. In another post of mine I specified that every day for two years while I was in college I ate cereal every morning, well that sort of habit induced neurosis hasn’t really changed as for the past year every day for breakfast I’ve had some sort of egg dish. Lately it’s been a heartier, what’s left in my fridge breakfast.
As of late I’ve been very much into breakfast, I’m not characteristically a breakfast person, I prefer the allure of a brunch situation, but also recently I’ve been waking up at 5 in the morning for no apparent reason and by the time I’m getting extra things done with the new found free space in my calendar, I’m hungry around 8 in the morning and in a sense it is my brunch. I don’t know why, but my schedule is a bit out of whack and instead of wondering and over scrutinizing it, I’m just going with the flow.
I find this breakfast to be the best for me, because even while it does take some babysitting, I can tell by sounds (I’m totally daredevil in the making) when either my vegetables – if I’m using them, or my meat and eggs are ready. I use a toaster oven for my English muffin so the timer goes off and the obnoxious sounds it makes to alert me that it’s ready – well there’s no not hearing or knowing it. It’s a quick breakfast, that leaves me full for a considerable amount of the day – at least until lunch – and I do, in point of fact, find that my day starts out better and I’m a better thinker having had a better breakfast.
This is also considered my garbage breakfast – sometimes I have vegetables that need clearing out, I find myself more sluggish than usual so I’ll throw in some greens that are high in iron, I’ll use meat that I have leftover from dinner and make this breakfast sandwich. With my new found free time I eat this, before putting my makeup on, and read the news (although with today’s current state of affairs I feel like I should watch cartoons instead), if I am pressed for time – I let myself do something I didn’t plan on and I have to rush out the door, I can wrap it in some parchment paper and eat it on the go. I don’t mind cold food sometimes and I’ll eat it before wasting it anyway.

APPLEWOOD SMOKED HAM AND CHILI GARLIC FRIED EGG BREAKFAST SANDWICH
1 egg (50 grams)
2 slices of Applewood smoked Ham
1 English muffin
1 tsp. chili garlic oil
The directions are so easy I actually feel a little silly even writing it.
Cut open your English muffin just to be prepared. In a pan, cook your ham over medium high heat, once your ham is toasted on both sides – it’s already cooked all the way through – put it in some aluminum foil and wrap it completely. Add it to the same pan your English muffin is on and put it in your toaster oven until it’s completely toasted. If you use a toaster instead of a toaster oven, then just leave it completely wrapped in your foil.
While your English muffin is toasting, in the same pan add some olive oil and your egg, once you egg has started to cook on the bottom at some chili of your choice and either a sliver of garlic or a pinch of garlic powder. Let it cook to your specific wants. Once your eggs are finally cooked and your English muffin is fully cooked, assemble them together and enjoy!
